Kimpira (sauted and simmered root veggies)

Gives you energy, as well as regulates and
strengthen digestive systems.

Anemia, diabetes(w/oil), mental disorders, nervous
disorders etc

Gobo (or lotus root)
Carrot
sesame oil (optional)
soy sauce

cut gobo and carrot, “shave” or “match stick”
heat up pan with a few drops of sesame oil
add gobo and pinch of sea salt, sauté until aroma
comes out
spread gobo, and layer carrot on top and spread
(do not mix)
add water (until half cover the veggies), and reduce
the heat
add a few drops of soy sauce, cover
simmer until almost tender
* add water if necessary.
At the end, heat up and stir, add more soy sauce if
necessary.

* burdock root is available at health food stores or
Asian grocery stores, sometime local green market
(fall and winter)
