Process
1 brief consultation
My personal chef service is not just “cooking meals” to satisfy your
appetite, but to help and support you achieve your goals and improve
your optimal health and wellness.
First thing we do is to meet in person, and discuss your health condition
(includes your food allergy, likes/dislikes) ,concern and goals through
everyday eating.
2 pantry/kitchen makeover
Then I'll check your kitchen and see what are needed to add to cook
delicious macrobiotic meals.
Those include basic foods(dried),seasonings, kitchen wares, etc.
3 frequent communication
It is important for you and I to communicate as often as possible.
As I mentioned, this service is not just cooking, but to help achieve
your goals, as well as to improve your optimal health and wellness.
For example, if you are feeling fatigue, I would make more “energy
boosting menu”.
Or if catching a cold(yin condition), I'd add more “yang” quality food to
improve your immune function.
If you are being stressed out, on the other hand, I'd make the meal
more “yin” for relaxing effect.
After a weekend of indulgence, I may cook some “cleansing” menu, etc
etc….
By e-mail, text or phone call, I'll try to communicate as much as
possible for the best service.
4 preparing meal
I'll come to your place once or twice a week, depends on your need(and
budget), prepare several different dishes, and leave them in pots or
containers.
You just heat up as much as you need before you eat.
If condition allows, I'll “half-prepare” and give you instruction how to
finish up the dishes.
For example, "steam 7 minutes” or, “bake 375F for 15min” etc.
* preferably, for stocking dishes, glass wares are better than plastic.
We'll discuss at kitchen makeover session.
* Also for heating, it’s better not to use microwave.
5 Typical Menu * variety of foods and cooking style
Whole grains (brown rice,barley,etc)
Soup (vegetables, miso/soy sauce)
Greens (blanced/steamed/pickled)
Stewed or sauted veggies(land and sea)
beans, bean products(tofu, tempeh, etc) or other plan protein
others
Eating in season
Human beings are a part of nature.
So it is important to eat in harmony with season and natural order,
which is the distinctive character of Macrobiotic way of eating.
In other words, if we eat food out of season or foods from different
climate/environment, we'll be out of balance and our health will be
challenged overtime.
So I use local, organic foods as much as possible.
This means, you may not have leafy green salad in the middle of winter,
or rich winter squash in July, since they are not naturally available and
not natural to eat, unless you import them thousands miles from
Mexico or something.
In yang season(spring/summer), for example, we need more yin foods
(cool, light, leafy, upward growing) to balance out, while in yin season,
we need more warming, hearty food(yang, root, round veggies etc).
Our mother nature offers what is best for us in each season.
This way, we can maintain a great balance and stay healthy.
Chew well, and “harahachibu”
How to eat is as important as what you eat.
Our body consumes tremendous amount of energy for digestions.
Also, for best and maximum absorption of nutrients, I strongly suggest
you chew at least 30 times, ideally 50 times per mouth full.
Even “healthy meal”, eating too much is not good for your health and
overloads your body system.
As Okinawan, the world healthiest population, say,” harahachibu (eat
until 80% full)” .
Discharge
When you start eating macrobiotically, some people may have some
uncomfortable conditions for a brief period of time, such as mild
fever, digestive problems, sore throat, skin rash, fatigue, etc.
But those are all natural response, called “discharge”.
Your body now is trying to cleanse itself after a long time of “not so
healthy eating habit” by getting rid of accumulated “toxins”
and those symptoms will go away soon naturally.
After this cleansing period, your body is on its way just toward pure
healthy state.
