Miso

“One cup of miso soup a day keeps a doctor away!”

Miso is a fermented soy bean paste, made of soy bean, sea
salt and
koji culture with other grains such as rice or barley,
and f
ermented for 6 months up to 3 years.

Miso is full of living enzymes and beneficial bacteria
(unpasteurized), which aids digestion and healthy intestinal flora.

MIso's high alkalinity neutralizes acidic condition in the body,
which strengthens the blood quality, immune system,  therefore
improves overall health.

In Japan, miso is associated with health and longevity.

M
iso soup cooked with vegetables and seaweed is
exceptionally beneficial for your health.

Studies on Miso and health benefits

Some studies have shown that miso prevents cancer growth due
to a substance called
genistein, which blocks blood flow to tumor.

Also a long term, comprehensive study in Hiroshima University
show
s that miso has a protective effect against radiation
because some substances in miso bind toxic heavy metal
including radiation and eliminate
them from the body.

Other studies have also shown that eating miso soup
significantly lower the cholesterol level, and risk of
heart/coronary diseases, diabetes and some
types of cancers.

Other health benefits includes :

R
elieves headaches, colds/flu, fatigue
Offsets the effect of sugar and alcohol
Increases energy level
and protect
s from radiation (Xray, radiation therapy, polution,
etc).

Above all, it is so delicious and comforting (and easy to cook!)
I strongly recommend that you have miso soup everyday : )

* For maximum health benefit, use miso aged
for 2 to 3 years,
and barley miso has the most medicinal effect.

* For a variety in cooking, I also recommend that you have
different kinds of miso, such as brown rice miso
(lighter color
and taste), chick pea miso
(sweeter) etc, and use depends on
your condition or taste.

*
South River organic miso is one of the best available miso in
the US, using traditional method to produce miso.
Also recommended is a brand called "Mitoku".

*
Miso soup that you find at most Japanese restaurants does not
use real miso, and almost no health benefit.
So please make your own!

Story of "Miracle of Miso"

When an atomic bomb was dropped in Nagasaki, people who
were
instructed to eat miso soup with wakame seaweed (along
with brown rice and some vegetables) everyday did not develop
radiation related sickness afterwards, while the rest of the a-
bombed survivors did and suffered various serious illnesses
such as leukemia or cancers to some degrees.
Later, numerous studies have proven that it was not really a
"miracle", though.

Umeboshi plum

"One umeboshi in the morning keeps a trouble away for
the day"
(an old Japanese saying)

Umeboshi is a salty & sour pickled plum, made with seasalt
and
shiso leaves, normally aged at least 6 months, up to 3
years.

It’s called “King of Alkaline”, and strong alkalizing effect on
your body and blood, and works as a buffer against excess
acidity from sugar, alcohol etc.

Also great for digestive problem and/or heartburn from
over-acidity, and it’s a much healthier alternative to
antacid.

*
antacid contains too much additives and chemicals, and in
the long run, your body will lose the natural ability of
stomach to produce
digestive enzymes (stomach acid),
causing many health problems including weakening
digestive system and immune function.

If you overeat and are afraid of consequences due to
indigestion, have ½ or one umeboshi before bed (maybe
with hot water if the taste is too strong).

Traditionally umeboshi has been taken in Japan in th event
of  heat attack/heat stroke, dehydration
, too.

For digestive problems, drink ume-sho bancha tea or ume-
sho kuzu drink.

Having ½ umaboshi with kukicha tea first thing in the
morning is a great way to start a day, by alkalizing your
blood and body, and keep yourself healthy and strong
throughout the day.

More about umeboshi :

1 "king of alkaline", neutralize acidic conditions

Umeboshi is a strong alkaline food, which neutralizes the
overall acidic condition in the body.
Taking 10g of umeboshi is said to be able to neutralize the
acidity created by 100g of sugar.

2 Strong antiseptic, germicidal effect

Citric acid in umeboshi coagulate proteins in viruses and
bacteria, which prevents their further grow
th. therefore, has
a antiseptic effect.
In some studies, researchers found antibiotics substance in
umeboshi, which sucessfully destroyed dysentery and
staphylococcus germs.
Another study shows that an extract from umeboshi has a
germicidal effect on tuberculosis bacteria.

3 Relieves fatigue, improve immune functions

Some organic acids such as citric acid, malic acid and
succinic acid burn lactic acid (cause of fatigue), therefore
helps relieve fatigue, and improve body's self-healing
process.

4 Improves blood fluidity and strengthen blood

A substance called "mumefural" and citric acid in umeboshi
have shown to improve blood fluidity.
Aalso sodium in
umeboshi strengthen the blood.

5 Helps digestions, improve appetite

Umeboshi also helps secretion of digestive enzymes
(amylase, stomach acid etc), as well as stimulate peristaltic
activity in the intestines.
Therefor it improves bowel movement, digestive function
and appetite.

6 Helps absorption of calcium

Citric acid in umeboshi helps absorption of calcium
